Plantation Island Resort is seeking an experienced and dynamic Restaurant Manager to lead our Food & Beverage team and deliver exceptional dining experiences across our vibrant resort outlets. This role is responsible for overseeing the daily operations of the restaurant and bar venues, ensuring outstanding guest service, managing team performance, maintaining operational standards, controlling costs, and driving revenue growth.
The ideal candidate will be a hands-on leader with a passion for hospitality and a proven track record in restaurant and bar management within a resort or hotel environment. Strong leadership, excellent communication skills, attention to detail, and the ability to motivate and develop teams are essential. The successful candidate will be committed to creating memorable guest experiences while maintaining the highest standards of service, quality, and operational excellence.
Key Responsibilities:
- Ensure a high standard of service delivery for all food and beverage services, minimising and resolving guest complaints to maximise customer satisfaction and repeat customers to the restaurant
- Develop and implement procedures and policies to ensure effective operation of restaurant outlet
- Work in conjunction with kitchen leadership team, to develop and promote daily and weekly menu specials, including development and implementation of promotional activity for the restaurant
- Develop on the job training and shift checklists, personally delivering training to upskill your team and ensure new employees are fully inducted into the department and their position
- Ensure staff rosters are effective and provide the correct number of staff to ensure a consistently high standard of customer service
- Monitor staff productivity, managing overtime costs and ensuring workloads are fairly distributed
- Ensure all pre-opening tasks are completed in a timely manner, so that the restaurant outlet opens on time for each meal service period
- Monitor cleanliness and functionality of all restaurant equipment, promptly escalating breakdowns to maintenance
- Ensure an adequate supply of crockery, cutlery, glassware and consumable items is in place at all times, so that service levels are not impacted through a shortage of equipment
- Liaise with laundry for any restaurant linen issues
- Ensure staff follow the company’s responsible service of alcohol policy, including ensuring all staff have been trained on the policy and how to recognize signs of intoxication, and that staff feel supported when refusing service
- Ensure any alcohol served is in compliance with liquor legislation and company policy
- Ensure all special dietary requirements are correctly communicated to the kitchen, checking special requests before they are delivered to the customer
- Proactively handle guest complaints, escalating to senior management if you are unable to positively resolve the complaint
- Work alongside the team on the floor as peak service times require
- Monitor buffet flow, liaising with kitchen staff to ensure dishes are well presented and topped up as required
- Ensure all activity carried out complies with the Food Safety Plan and food hygiene requirements
- Any other reasonable task as requested by your manager
About You:
- Previous experience in a senior service leadership role in a hotel or restaurant outlet environment
- Excellent customer relationship and communication skills, with demonstrated experience and knowledge in dining trends and wine
- Has the ability to coach, mentor and inspire team members, building a high performing customer service focused restaurant team
- An understanding of point of sale and inventory management systems is preferred.
