Plantation Island Resort is where unforgettable family memories meet genuine island hospitality. We're now looking for a hands-on, innovative, and passionate Commis Chef-Butcher.

Key Duties Include:

·        Receive deliveries of meat and inspect them to ensure that they adhere to the highest quality standards and are not expired

·        Prepare meat into forms ready for cooking using a variety of actions, including boning, tying, grinding, cutting, trimming and lovo preparation

·        Oversee meat storage including freezers and fridges, ensuring optimum storage conditions are maintained to preserve products life

·        Correctly record delivery dates and ensure meat products are used on a FIFO basis

·        Provide guidance and on the job training to trainees and commis chefs

·        Estimate requirements and order or requisition meat supplies to maintain inventories in conjunction with the Sous Chef and Executive Chef

·        Cure, smoke, tenderize and preserve meat

·        Ensure compliance with Food Safety/ Health & Safety regulations within butchery preparation areas

·        Undertake the weekly/ monthly stock-take of butchery provisions, reporting results to the Sous Chef /Executive Chef

What We’re Looking For:

·        Completed tertiary or vocational studies in Butchery

·        Minimum 2 years’ experience in a mid to large size hotel or resort environment or commercial butchery operation

·        Demonstrated understanding of Food hygiene and safety principles

·        Basic understanding of food costings

·        Ability to train and coach trainee and commis chefs
