Food Pro PNG Ltd is a PNG-owned food production, wholesale, retail and QSR business with over 300 staff. We are seeking Commercial Bakery Manager/s to run our 24 hour bakery operation at the 8 Mile Production facility in Port Moresby.

The Role

The bakery operates 24 hours a day and produces at volume across a wide range of lines, including bulk cakes, sweets, meat pies, bread and other baked goods for our wholesale customers and our own retail and QSR outlets.

You will manage a team of up to 30 bakers and production staff, reporting to the Group Operations Manager. The role is hands-on: you will be on the production floor, training existing and new staff, setting daily output, scheduling batches against orders, and making sure every product leaves the bakery at the right weight, quality and packaging.

Key responsibilities include:

• Planning and running production across all bakery lines in a 24-hour operation
• Leading, rostering and training a team of up to 30 staff, building skills across product lines
• Operating and overseeing packaging equipment and pack/label accuracy
• Tracking waste and yield, and acting on variances
• Maintaining food safety, hygiene, cleaning and quality standards with our QA Team
• Ability to work night shifts if required

Ideal Candidate

• Qualified, experienced baker with strong skills across bread, cakes, pastry and pies
• Proven experience managing a commercial or industrial bakery team
• Hands-on experience with packaging equipment
• Confident training staff at all skill levels
• Comfortable working nights and across rotating shifts
• Practical, organised and steady under production pressure
• Experience in PNG or as an expat highly regarded
• References for previous employers required
