Goolma Ltd which operates Paradise Cove Resort, Blue Lagoon Beach Resort & Octopus Resort is seeking applications for a talented and passionate Pastry Chef De Partie to join our culinary team.
In this role, you will be responsible for crafting exceptional pastries, desserts, and baked goods that reflect the resort's commitment to world-class hospitality. Working under the direction of our Pastry Chef, you will contribute your expertise across the pastry section while upholding the highest standards of quality, creativity, and food safety.
KEY RESPONSIBILITIES
- Prepare and present a wide range of pastries, desserts, cakes, breads, and confections to resort standards
- Assist in menu development and the creation of seasonal and special event offerings
- Maintain consistent quality control and presentation standards across all pastry items
- Ensure proper stock rotation, storage, and labelling of all pastry ingredients
- Support and mentor junior kitchen staff and apprentices within the pastry section
- Uphold strict food safety, hygiene, and HACCP compliance at all times
- Collaborate with the broader culinary team across banquets, buffets, and a la carte service
- Operate and care for all commercial pastry equipment responsibly
REQUIREMENTS & QUALIFICATIONS
- Minimum 5 years’ experience in a commercial kitchen, preferably within a hotel or resort environment
- Proven hands-on experience across multiple kitchen sections including both cooking and baking
- Certificate III or IV in Commercial Cookery, Patisserie, or an equivalent recognized culinary qualification
- Strong technical skills in pastry arts — including sugar work, chocolate tempering, and plated desserts
- Solid understanding of food safety regulations and best practices
- Ability to work effectively under pressure in a high-volume, fast-paced kitchen
- A creative eye with meticulous attention to detail and presentation
- Excellent communication and teamwork skills
- Flexibility to work rostered shifts including weekends and public holidays
This is an on-site live-in role with shared accommodation.
