Junior Sous Chef

Job Description & Skills/Qualifications Required

Goolma Ltd which operates Paradise Cove Resort, Blue Lagoon Beach Resort & Octopus Resort is seeking applications from a range of qualified and experienced professional candidates  to take the following position at Octopus Resort.

Position: Junior Sous Chef - Island Based

Location: Octopus Resort, a popular resort located in the stunning Likuliku Bay on Waya Island in Fiji's breathtaking Yasawa Islands.

Key Responsibilities

  • Assist the Executive Chef and Sous Chef in the preparation, cooking, and presentation of all menu items (breakfast, lunch, dinner, specials, and events)
  • Oversee and coordinate specific kitchen sections (e.g., hot line, grill, pantry, or pastry support) during service
  • Ensure consistent food quality, portion control, presentation, and plating standards
  • Maintain strict hygiene, food safety, and sanitation practices (HACCP compliance)
  • Manage daily stock rotation, inventory checks, and ordering of fresh ingredients
  • Support menu development, costing, and implementation of seasonal specials using local Fijian produce
  • Train, guide, and motivate junior kitchen staff
  • Step in to lead sections or the kitchen when required, demonstrating strong leadership potential

Requirements & Qualifications

  • Minimum 3–5 years’ experience in a professional kitchen (resort, hotel, or restaurant experience highly regarded)
  • Previous experience in a Sous Chef or senior line cook role is preferred
  • Solid knowledge of international cuisine with an interest in Pacific/Fijian ingredients and flavors
  • Strong organizational skills, ability to work under pressure, and excellent time management
  • Passion for food quality, creativity, and beautiful presentation
  • Good communication skills and a positive, team-oriented attitude
  • Willingness to live and work in a remote island setting and adapt to tropical conditions
  • Relevant culinary qualifications (Certificate/Diploma in Cookery or equivalent) advantageous
  • Physically and medically healthy

Position is island-based.

Rotation is 24 days on and 8 days off.
