Mana Island Resort & Spa is a glorious resort located in the Mamanuca Group of Islands with 160 fabulous rooms  offers competitive wages, benefits, training and career development and a great working environment. We are seeking committed, enthusiastic and highly motivated applicant to join our dynamic team at our island based resort for the following positions: -

This island based position reports to the General Manager, Operations and the successful applicant will be responsible for the following:

Primary Responsibility/Accountabilities:

  • Plan, direct and control our food & beverage operations, which consists of 6 restaurants and 6 bar outlets. 
  • Coordination and delivery of catering requirements for special functions.
  • Manage costs to reflect operating forecasts and budgeted figures relating to staff overtime, equipment, materials
  • Utilisation and waste elimination without compromising on product quality and service.
  • Leading, directing and training F&B team comprising of food & beverage outlet assistant managers/supervisors and service personnel.
  • Maximise revenue.

Qualifications & Experiences:

  • A minimum of 5 years exceptional work experience in the management of food & beverage outlets and special
    functions in a 4 to 5 star resort property is essential.
  • Previous experience working in an island resort establishment will be an added advantage.
  • Knowledge of all kinds of beverage including Whiskey, Gin, Rum, Cocktails, etc.
  • A sound practical understanding of principles and best work practices associated with food & beverage cost control and service management.
  • Good people management skills in order to lead, direct, train and motivate the team through a change process that is presently underway in the company, in order to achieve the company mission statement and goals.
  • Acquired either formal qualifications and /or received professional training and development, in relation to the management of food & beverage service operations and people management related skills, in particular, train the trainer on-the-job training instructional skills.
  • Excellent analytical skills, accuracy in numbers and attention to details. Well versed in the use of spreadsheets, Materials Control Software and Microsoft office system. 
  • Knowledge of Micros POS.
